Honest craftsmanship with a Dresden soul
At Feldschlößchen, brewing beer follows a clear principle: great ingredients, experience, and a process that works. Our brewers adhere strictly to the German Purity Law (Reinheitsgebot), using only malt, hops, yeast, and water.
Brewing beer takes time and care. From the first brew to the finished product, many steps are carefully coordinated. This is where true brewing expertise shows: every stage is closely monitored, because great taste is created in the details. Each ingredient brings its own character, and every step plays its part.
Water
Beer is made up mostly of water – so we make no compromises here. Our brewing water comes directly from the Ore Mountains. It is pure, clear, and forms the unadulterated foundation for the natural taste of our beers.
Malt
Malt is created through the natural germination of selected barley varieties and forms the basis for the distinctive flavor of our beers. It provides color, body, and that characteristic malty note – both in our classic bottom-fermented beers and in our specialties.
Hops
Hops define the character of a beer. At Feldschlößchen, we use only selected varieties from the finest growing regions. They provide the typical delicate bitterness that gives our beers their balance. It’s no coincidence that hops are often referred to as the “soul of beer.”
Yeast
Yeast is alive. It determines how a beer develops. That’s why we use only yeast from our own pure cultures. It ensures consistent quality and gives our beers their unmistakable signature.
Milling
In the first step, we mill our barley malt so it can dissolve more easily in water.

Mashing
During mashing, the milled malt is mixed with warm water. This process releases the natural sugars from the malt. The mash is then filtered – a step known as lautering – to produce the wort. Temperature and timing at this stage define the characteristic flavor and color of our Feldschlößchen beers.

Lautering
In the lauter tun, we separate the mash into solid components (spent grains) and liquid components (wort). While the wort plays a key role in the brewing process, the spent grains are typically reused as nutritious animal feed.

Wort boiling
The wort is boiled in the brewhouse and refined with hops. Our brewers carefully control both the timing and quantity of hop additions. This is how the bitterness and aromas develop that shape the taste of our beers.

Fermentation
Good beer cannot be rushed. During fermentation, the yeast converts malt sugars into alcohol and carbon dioxide. The young beer is then given time to rest: it matures in cool cellars until the carbonation becomes finely balanced and the flavor well-rounded.

Filtration
One of the final steps is filtration, where the beer is cleared of any remaining particles.

Bottling
Once the beer has fully matured, it is bottled. Whether in bottles or kegs, it leaves the Feldschlößchen Brewery in Dresden – ready for the next moment of enjoyment.
